This beautiful, gloomy weather has got me in the mood for some Pumpkin Soup! I'm making a batch today, and tonight we'll eat it from toasty cobb loaf. I've been making this soup for years, prior to that I thought I hated pumpkin soup. Until my hubby asked me if I'd make some for him on a cold Winter's Day. I reluctantly made it, with no love in my heart (lol) and then i begrudgingly had a little taste, and realised I loved it! What had I been missing all these years?
Today has been one of my favourite kind of days already. It's been raining since I woke this morning, it's dark and cool. I've got nowhere to be. 3 packages arrived. Hubby came home because work got rained out. I've been up since 5am, so most of my work for the day is done. (It's midday now). We'll probably watch some movies and I'll work on some hangings, and the 3 of us (including our German Shepherd pup, Nola) will hang out at home, having a cozy little day. B will have 37 coffees, and leave used mugs everywhere. Nola will bite our toes because she wants to go outside and play in the rain. She loves the rain, she runs around with her mouth open, eating it!
So that's us for the day. Happiest when doing something low key that involves staying in our pj's... I've corrupted B since marrying him. When we first met, if he was hanging at home he'd be wearing normal day clothes. He couldn't believe I would hang out at home in my pj's! But if I'm at home, I'm in my pj's. Our first Christmas together, both Mum and I bought him Peter Alexander sleep shorts. He laughed. He'd never worn pj's even to bed! Just old shorts and the like. Well, fast forward 6 years, and the minute he gets home, he's STRAIGHT into his pj's! Like lightning. I mean sometimes I actually laugh at how fast it happens.
As I type this, B and Nola are in our bedroom (it has the best view in the house). B is playing playstation (insert eye roll) and Nola is laying on the bed, with her head on my pillow like she's a human. Once I publish this I'll be joining them and looking forward to some spooning. EASY SLOW COOKER PUMPKIN SOUP!
1 medium butternut pumpkin - peeled and seeds removed 1 tsp minced garlic 2 medium potatoes - peeled and chopped 1 brown onion - peeled and chopped 1.5 teaspoons curry powder 2.5 cups vegetable stock 1 cup cream Salt & pepper (whatever you feel, don't be shy though) Fresh chives - chopped (about 3 tablespoons)
Put garlic, pumpkin, potato, onion, curry powder, vegetable stock and salt and pepper in the slow cooker.
Cook on low heat until the vegetables are very soft. (About 4 hours)
Turn off the heat and let cool for a little bit, then using a stick blender, purée until smooth. (You could also use a blender or food processor)
Stir through the cream
Add 2 tablespoons of the chopped chives (reserve 1 tablespoon for garnish).
Turn the heat on again (low) and cook until hot enough to serve.
Sprinkle the remaining chives over soup - and serve with some delish fresh bread or warm toast!
