Ok, if you know me, this will come as no shock because I've mentioned it many times. I don't like cake. There, I said it. It's often dry and boring, and just blahhhhh. So if you ever do get a cake or cupcake recipe recommendation from me, don't take it lightly! It's going to be a good one ;)
I've been cooking these cupcakes for around 13 years now, and they never disappoint. Well hello, the recipe is by the Kween herself, Nigella. (Who I met in person last year. Wow. Love her. She's even more delicious in real life).
Anyway, this recipe could not be anymore simple. It's SO easy. I've got 2 links for you, one is for the cupcakes and one is for the icing... Here you go:
Sometimes I pipe the icing on, sometimes I just slather it on (pictured in the top photo). I just wanted to go for that old school, rustic look. The messier the better! Then I just topped with flowers from the garden. Some dried, some fresh.
(The flowers used were: roses, pansies, celosia, geraniums, violets, azaleas, bougainvilleas and some thyme sprigs).
This icing is really amazing because once you spread it on the cupcake, it actually sets and holds its shape. So I usually have a few bits dripping down on the sides, because I just love the look of it.
The last time I made these cupcakes I used my Russian piping tips. The result you get is pictured in the second photo - with the cute little flowers apricot, peach and pink! I bought a few different dyes and created the colours myself.
Otherwise, just ready made sugar flowers also look amazing!
