I think I first published this a few years ago on my food blog, after I made a batch one day. I threw some random ingredients in (basically whatever I had on hand) and it turned out to be the most delicious granola I'd ever tasted. A very happy accident.
We love to eat it plain (hubby often eats it straight from the jar when he gets home from work). It's also amazing atop a smoothie bowl, or with yoghurt. I love gifting granola. Make a big batch, fill up some jars, tie some sweet ribbon/twine around the top, and it's the perfect little present. I usually drop a jar to my Mum and my sis-in-law, which they love.
As I mentioned today in my insta story, I'm putting together a little surprise package for my bestie, who's staying in town this week (she lives a few hours away). So I'm taking advantage of her being just down the road, and leaving a surprise package on her doorstep! I'm giving her one of my macrame chandeliers, some of her fave beauty products, a jar of granola, some macadamia nuts, and some passionfruit, fresh from my vine. So it's nearly all stuff I've made, or harvested myself, which I think makes it that much more special. Anyway, that's enough outta me, here's the recipe y'all!
1/4 cup pure maple syrup 1 Tbs honey 3 cups oats 3/4 cup chopped macadamia nuts (or any nuts you like, today I used macadamia, walnuts and pecans) 3/4 cup desiccated coconut 1/3 cup coconut oil 2 tbs brown sugar Sprinkle cinnamon (tiny tiny TINY dusting) 1/2 tsp sea salt
Mix dry ingredients in one bowl Mix wet ingredients in separate bowl then combine the 2, spread evenly on a baking sheet lined with baking paper, and bake 180 degrees (or 160 fan forced oven) until golden, turning a couple of times.
