Mexican food. Show me a person who doesn't like it, and I'll show you a liar (or a weirdo).
We love our Mexican food round these parts, so when I find a recipe like this, which is full of honest to goodness fresh food, I immediately jump on board.
That's the thing that drew me in with this recipe. A few herbs, an onion, a jalapeño, garlic, salt n pepper, and 2 oranges? Wait, what? Oranges? Yes, oranges. And I'm convinced it's what gives this dish such amazing juiciness and flavour! All hail, Recipe Tin Eats for this amazing concoction.
The other factor. The slow cooker. It's just a magical little machine isn't it! It does all the work for us, as we merrily go about our day. Which for me yesterday, was included but not limited to; op shopping, swimming in the ocean, swimming in the pool, oh and some work somewhere in there. It gives me great comfort to know that dinner is being prepared whilst I do whatever my heart desires!
I had the family over last night, for a little midweek fiesta, and I served up a few options (another thing I love about this dish). Firstly, I'll give you a little list of all the fixing's (love that word, thanks America) I serve with the pork:
* Shredded red cabbage (just love the crunch!)
* Grated cheese
* Grated lettuce
* Sour Cream
* Chipotle sauce
And then I also have some corn chips and tortilla wraps available. That way, you have 3 ways to eat this meal!
Nachos, burritos or a big mexi-salad.
Last night nearly everyone ate it in the form of a burrito, and tonight with the leftovers, hubby and I are going to have it as a salad. Basically I just combine all the salad ingredients, heat up the pork, then add it to the salad with some cheese and sour cream, and voilà! Delish mexi-salad!
